HONEY COCONUT GRANOLA BARS

HONEY COCONUT GRANOLA BARS

Ingredients

    • 1 cup old-fashioned oats
    • 1 cup shredded coconut, unsweetened
    • 1 T oat flour
    • 1/2 cup flaxseed, ground
    • 1/4 cup pecans, halved
    • 1/4 cup pecans, roughly chopped
    • 3 T mashed banana
    • 1/4 cup mini chocolate chips
    • 1/3 cup coconut oil, melted
    • 1/4 tsp. salt
    • 1/3 cup Speciality Honey, We love it with Highland Honey & Ginger

Instructions

  1. In a large bowl, combine oats, coconut, flour, flaxseed, pecans and salt. Stir everything until well combined.
  2. In a microwave-safe bowl, add coconut oil and honey. Microwave for 20 seconds, stirring after 10 seconds, until melted and thin.
  3. Stir in mashed banana.
  4. Pour coconut oil mixture into dry ingredients and stir until a dough forms.
  5. Stir in the chocolate chips.
  6. Line a 20 x 20cm dish with parchment paper.
  7. Scoop dough into the dish and firmly press.
  8. Cover and refrigerate for 2 hours before cutting.
  9. Cut into 10 to 12 bars.
  10. Wrap individually in parchment paper and store in the fridge for up to 1 week.
